Gluten-Free Chocolate Entremet

Our flourless chocolate base supports a rich, mascarpone insert. A sabayon mousse made with heavy cream, semi-sweet chocolate and a touch of wine and brandy is layered on top of the base. The top is coated in chocolate, and dusted with cocoa. We then artistically arrange chocolate decorations to complete the presentation.
